This is demonstrated in this kawai restaurant in the Panier district, where the eight-armed beast is eaten not as a stew but as takoyaki: a pancake-like ball of dough stuffed with octopus and sprinkled with bonito shavings that ripple with heat. Very popular in Osaka, they are prepared here by Niho in a miniature kitchen where he also makes okonomiyaki (a cabbage-based pancake), tasty gyoza, and ramen the old-fashioned way (some weekends from November to April, see their Facebook page and reserve).
